Bhubaneswar, Nov 24: Indian cuisines are a blend of diverse flavours with aromatic spices taking the centre stage. What stands out in Indian foods is its combination of multiple flavours that create a blast in the taste buds. Odia foods are a subset of it with a dish being cooked from ingredients that is almost impossible to imagine for people living in other states.
Michelin Star Chef Vikash Khanna, whom we have popularly seen judging Masterchef had recently visited Odisha. He was puzzled to see the 'combination' of flavours in the go-to dish of every Odia, 'Dahi bara aloo dum'. He thought to himself that the dish would never work for him.The moment he gave it a bite he couldn't help but danced to the taste.
Speaking at length, Chef Khanna gave justice by beautifully describing the cuisine that Odias take pride in. "Dahi bhalla and Aloo Dum, with jhaas (buttermilk) and jeera powder over it, garnished with seo."
Earlier in season 6 of Masterchef Abinash Nayak and Smrutisudha Singh had made the judges go gaga over our authentic recipes like Besara (mustard curry) and Kakara pitha (a confectionery pie with coconut stuffing). In season 7 Avinash Pattnaik also won hearts with Odia dishes.
